Why our lagers wait six weeks

Ales are ready in two weeks. Our lagers take six, and most of that time they are doing very little (sample note).
After fermentation the beer sits in the cold cellar just above freezing. The yeast tidies up, the flavours round off and the beer clears by itself, without filters.
That is why Halden Pils and Night Shift taste clean and why we never rush them, even when the taproom runs low.
