Measuring a pan: base, rim and why it matters

Pan sizes are a muddle: some makers measure the rim, others the base (sample note).
We give every pan its base size, because that is what sits on the hob ring or the induction zone. A pan whose base is much bigger than the ring heats unevenly; much smaller and the flame climbs the sides.
Measure your largest ring, then choose a pan with a base the same size or up to 2 cm larger.
