The first baker comes in at two to roll and cut the dough that proofed overnight. By four the fryer is hot; by half past five every tray is glazed and the case is full.
Nothing is bought in. If a flavour sells out, it is gone until tomorrow.

Day-old donuts go in a bag of six for $6 the next morning, and the rest goes to the food bank on Mercer Green (sample).
Yes. Call before 18:00 the day before and we put a loaf aside with your name on it until noon.
